Yes, the extra 64K Video RAM not present in your apple II shouldnt prevent you from playing most games.
You can put 2mb of RAM into an Apple IIe, thats how I roll with my IIe's but only really used for word processing, Apple works and floppy disk copying (cough) I mean backing up LOL.
Your printer card wont be of much use unless you have a printer but pop it in slot 3 if you want it installed, PS the edge connector on the card could be cleaned with I.P.A. before installing as I have loads of cards and they always seen to be grimey, you wipe it and heaps of grime on the tissue.
Everywhere there is an edge connector or IC socket these will be your first point of failure.
