NTSC/PAL: Raspberry Pi, An Apple 2 & an AppleColor A2M6021X

I have an Apple //e Platinum 128k with an NZ bought A2M6021X AppleColor Composite display.

Coming from the UK originally I'm aware of the nuances that begat Apple in the early days around PAL.

Effectively I am wanting to re-create David Schmenk's setup:

He is using a2pi on his Raspberry Pi to take the keystrokes from the real Apple2. He then connects the Raspberry Pi to the AppleColor composite display to allow it to display brilliant colour and effectively stealths the operation of a IIGS on the //e using the Rpi. Neat set up, but my AppleColor when plugged into the RPI is just mono.

I set /boot/config.txt to force NTSC mode but I don't see any difference. If I plug this into a normal composite display (I have a Samsung SyncMaster 940MG monitor with composite in), it displays in colour as it should, so I'm thinking it's the monitor. Here's my /boot/config.txt if you have knowledge of the Rpi and can shed any light.
